potato_chips2This article (March, 2009) shows that chronic ingestion of acrylamide-containing products induces a proinflammatory state, a risk factor for progression of atherosclerosis [and much more].  Read this wiki article on acrylamide which can be found in breakfast cereals, pastries, cookies, breads — starchy foods heated at high temperatures.  Wait, it seems coffee  contributes a huge percent (20-40%) of acrylamide consumption in adults.  Wow, it is hard to get away from this stuff.
